Etienne Daulny owns prime parcels scattered across the Sancerre AOC totalling about 16 hectares. The soils of these parcels differ greatly and help to provide complexity and Etienne combines these plots skilfully to create his stunning Sancerre. Daulny favours stainless steel tanks for fermentation and inhibits malolactic fermentation, but then ages the wine on fine lees. The result is a clean and bright, very appealing, Sauvignon with great texture.
The estate consists of 15 hectares of vines that are divided into about 50 different plots. The soils of these plots differ greatly and help to provide complexity found in Sancerre. Etienne combines these plots skilfully to create his cuvée of Sancerre.
Yield is about 50 hl/ha and the wine is fermented and aged in temperature-controlled stainless steel tanks. The wine sees no malolactic fermentation and thus retains freshness and vibrancy beneath plenty of forward, ripe fruit.
