This temperature difference ensures the grapes ripen slowly, so they develop maximum flavour. This is simply outstanding wine for the money, soft super-juicy ripe plummy fruit and a long full-flavoured finish.

Led by Roberto Carranca, the young and dynamic winemaking team at Indómita skillfully craft wines from their great vineyard holdings in two of Chile’s very best regions. The cooler climate Casablanca is great for Sauvignon Blanc, Chardonnay and Pinot Noir while the warmer Maipo Valley offers classic Cabernet Sauvignon and Carménère. Cold maceration at 10°C for 4 days. Classic alcoholic fermentation in stainless steel tanks at 28-30°C to preserve aromas and flavour.
